The service Upsafe Gmail Backup easily backs up and restores mail accounts. You can download all messages and store them in a local repository as EML files (one e-mail = one file) with attachments. You can choose to backup emails in a certain period of time (this can be applied to the new emails starting from a certain date). The backup is incremental.

As far as I can tell, Upsafe is Windows-only, but it’s stone-cold simple. All you do is install the program, connect it to your Gmail, and download. It will do incremental downloads and even let you browse your downloaded email and attachments from within the app.
